I cook stir fry a lot! Probably, 80% my vegetable dish is stir fried. It’s simple and fast and easy.
My younger brother comes to live with me now. He’s still in high school. On school day I have to cook super early so he can bring lunch from home. So stir fry is my go to. I want him to eat vegetables too.
I cannot let him eat chicken nugget and rice everyday, right? Chicken nugget, rice and stir fry, so much better! He gets the vitamin and mineral, less prone to disease, and less trouble for me.
This particular stir fry is new to my menu rotation. I get bored with kangkong stir fry, and want something else. So when there’s discount on my supermarket on baby corn and baby green bean, I decided to combine the two and make some stir fry. And it’s delicious.
I can buy baby corn and green bean if they aren’t on sale, btw. They not that expensive. It just, when the price is lower than usual, the desire to buy is increasing in me. Hehehe..
Green bean contains iron, vitamin B1, B2, K, and folic acid. While baby corn contains vitamin A and C, and iron. So, both is very good for your health. They also low in calories. Delicious and healthy. My two favorite combination.
I add egg because I just feel like it. It’s give different texture to the dish. While chili pepper is there just for add some color.
What I do first is to cut all the green bean, baby corn, onion, and chili pepper. Then, I minced some garlic. That’s it. Now they are ready to put in the pan.
Heat up some cooking oil. Sauté the onion until translucent, then add garlic along with baby corn, green bean, and chili pepper. Add some water so it won’t burn.
Cook until the vegetable are done, and add salt, pepper and oyster sauce. Lastly, add the eggs. I put aside the veggies to make room for the eggs and mix the egg while in the pan. Then I mix it all together.
One crunchy tasty stir fry is ready. I like the combination of baby corn and green bean, they both crunchy in different level, both tasty on it’s own and don’t need complicated seasoning. This easy recipe definitely will appear more often in my family’s menu.
- 200 gr green bean
- 200 gr baby corn
- 2 eggs
- 1 onion
- 3 cloves garlic
- 2 chili pepper
- 2 tbsp cooking oil
- 1 tbsp oyster sauce
- salt and pepper
- Cut the green bean and baby corn
- Slice onion and slice thinly the chili pepper
- Mince garlic
- In a pan or wok, heat up cooking oil and add the onion. Cook until translucent
- Add green bean, baby corn, garlic, and chili pepper. Add some water. Cook for approx. 5 min until the vegetables are done and water reduced.
- Add oyster sauce, salt and pepper
- Add egg and stir.
- Baby corn and green bean stir fry is ready.
